Among homemade recipes, one of the main ones is salting fish roe. The favorite, of course, is red caviar. But you can also prepare carp or pike caviar yourself at home. This process requires the right recipe. Several step-by-step preparations will be described below.

How to salt red caviar

This recipe is equally suitable for pink salmon and trout, salmon, salmon, sockeye salmon, and chinook salmon. The brine for salting (brine) is cooked according to the specified recipe. But depending on taste preferences, the holding time varies.

To prepare the recipe, prepare yastyki with extracted caviar. Take a saucepan with high sides. They are needed to prevent the caviar from spilling out over the edges when the film is peeled off.

  1. Dilute 1.5 teaspoons of salt in 1 liter of water, and add 1 teaspoon of sugar. Now you need to place the pan on the stove and bring the brine to a boil. Make sure that the salt and sugar are completely dissolved.
  2. Remove the pan as the liquid begins to boil. Cool the container to a temperature of 50 degrees (you can use a special thermometer for pans).
  3. Immerse the prepared caviar eggs in brine at the desired temperature.
  4. Take a whisk. Begin to separate the film by stirring the caviar. As the shell separates, remove it from the rim. Adjust the strength of the whisk depending on the degree of ripeness of the caviar. You need to mix the caviar carefully so as not to damage the eggs. Otherwise, you will end up with “slurry.”
  5. After 10 minutes, take the sample. If there is not enough salt, leave it to salt for a few more minutes. The average salinity limit is 20 minutes. Everything above will be for salt lovers.
  6. After reaching the threshold of the required taste, drain the brine and place the caviar in jars.

Advice. If you have a lot of caviar, you can freeze it. The caviar will not lose its taste properties due to this, and you will preserve the delicacy.

Freshly prepared red caviar must be consumed within 3 days. Then it will deteriorate.

Salting carp caviar in jars

Carp caviar is prepared according to many recipes. Here is one of them, according to the results of which the caviar is placed in jars and rolled up before consumption.

  1. Cut the fish and remove the caviar from it. Make the cut carefully so as not to damage the gallbladder. If bile leaks, the caviar will be spoiled and further salting is impossible.
  2. Pour salt into the bottom of a deep aluminum pan. The layer thickness must be at least 1 cm.
  3. Place caviar eggs on top of the salt.
  4. Sprinkle salt on top. The top layer should be no more than 15% of the weight of the caviar.
  5. Leave the dishes in a cool place covered for 3 days. You can wait up to 5 days.
  6. After this time, drain the released brine. The yastyki are removed from the container and washed under boiled water.
  7. Next, the caviar is placed in sterile jars, rolled up and stored in the refrigerator or other cool place inaccessible to light.

In boiling water, carp caviar is freed from the film using a fork

This recipe is prepared using brine - a salty solution in certain proportions. For 1 liter of water you need 100 g of salt.

  1. Prepare eggs with caviar. Go over them with a knife to cut the film. And leave in a metal bowl.
  2. Prepare the brine. After boiling, remove the brine.
  3. Pour the salt solution over the caviar.
  4. Start stirring the caviar immediately, freeing it from the films (use a fork). This will take you about three minutes.
  5. Drain the water. Prepare the boiling brine again.
  6. Pour into caviar. Start stirring. Now the film should wrap around the fork, separating from the caviar. Time for three minutes and drain the salt infusion.
  7. Boil the brine a third time and pour it over the caviar. The water will be lighter and cleaner. After three minutes, pour the brine again and drain the caviar in a colander. The water will drain for about 15 minutes.
  8. Take a sterile two-liter jar. Fill it with 2 tablespoons of vegetable oil.
  9. Place caviar (75%) in a jar. Sprinkle a teaspoon of salt on top. Stir.
  10. Add the remaining caviar and fill it again with 0.5 cm of oil.
  11. Take a plastic lid, put it on the jar of caviar and put it in the refrigerator overnight.
  12. The next morning you can try the caviar.

Carp caviar can be salted in just a day

Salting pike caviar

  1. Carefully remove the caviar from the fresh pike. Rinse in filtered or boiled water.
  2. Lay gauze and perform the following procedure over it: place the eggs in a colander and spread the film over the caviar. The caviar will fall through the holes of the sieve. Remove excess film with a fork. Pick up the caviar and pass through the sieve again. A couple of times is enough to remove the shell. Place all caviar in cheesecloth.
  3. Prepare brine (1.5 tsp salt per 1 liter of water). Dip the caviar into it, stir, removing excess film and veins. Then boil a new solution.
  4. Repeat the procedure with brine no more than three times for 2-4 minutes.
  5. Cool the caviar. Place in a saucepan. Sprinkle it with salt - 15% of the caviar weight.
  6. In this form, pike caviar should be infused for 3 days.
  7. After the expiration date, the brine is drained and the caviar can be consumed.

Attention! Pike caviar can be stored for no more than 5 days. If you want to store it, then put it in a glass jar and fill it with 0.5 cm of refined oil. In this form, the caviar will be stored in the refrigerator for about 1 month.
