If you have kefir lying around in the refrigerator, it’s very easy to find a use for it. The simplest and fastest thing you can prepare is to bake pancakes with kefir; a recipe with photos will tell you step by step how to do this. Although in fact everything is so simple that even a teenager can handle it. At least I managed it in due time: I found a recipe for pancakes with kefir in a cookbook, chopped up some dough, and after half an hour the pancakes were ready. Of course, they didn’t turn out perfect the first time, but they got better every time. Kefir pancakes taste somewhat like yeast pancakes, but are quicker and easier to prepare.

Ingredients

To prepare pancakes with kefir you will need:

  • low-fat kefir 1% – 300 ml;
  • wheat flour – 130 g;
  • egg – 1 pc;
  • granulated sugar - 2 tbsp. l;
  • salt – 2 pinches;
  • refined sunflower oil – 3 tbsp. l;
  • soda – 0.5 tsp (+ 1 tbsp vinegar for extinguishing).

How to cook pancakes with kefir. Step-by-step recipe with photos

Let's prepare the ingredients according to the list so that we don't forget anything during the process of whipping and mixing the products. In a deep container, such as a bowl or pan, break one egg and combine with sugar and salt.

Culinary advice. For a neutral taste of pancakes, add a moderate amount of sugar (one spoon per glass of kefir); such pancakes can be served with any filling or additive. Dessert pancakes are made sweet, and snack pancakes are made sweet-salty or bland. A little sugar is added to any pancake recipe to make them golden brown. Unsweetened dough will make baked goods pale.

Shake the egg mixture with a whisk and pour in the kefir. Preferably slightly warmed up or at least not from the refrigerator.

Mix until smooth. Sift the flour into a separate container. Add to the kefir mixture in parts. I made thin pancakes with kefir, so I added a little flour. The pancake dough turned out to be as thick as full-fat kefir, that is, not entirely liquid. Then, after adding the remaining ingredients, the pancake dough will become thinner. You need to beat the dough thoroughly so that there are no even small inclusions of dry flour or lumps.

We extinguish the soda with vinegar and wait until the mixture stops hissing and bubbling. Pour into the dough.

Immediately whisk vigorously, dispersing the soda. Do you see how the kefir pancake dough turned out? Everything is in bubbles! This is the action of soda. Thanks to her, the dough fluffed up and became bubbly, and the kefir-based pancakes would turn out porous and tender. In a hot frying pan they will bake perfectly and brown evenly. After baking soda, add sunflower oil for better dough structure and elasticity of pancakes. In addition, by pouring oil into the dough, you save yourself the hassle of greasing the pan every time. But after two or three pancakes, you still need to do this, otherwise the pancakes will dry out and turn out not so tasty.

Instead of oil, you can grease the pan with a piece of unsalted lard. Heat it thoroughly and coat it along the walls and in the center of the bottom. Then reduce the heat to medium.

Use a ladle or ladle to lift the dough, pour it into a heated frying pan and immediately rotate or shake from side to side. In a well-heated frying pan, the dough will immediately become holey and within a minute the wet areas will disappear.

We lift the pancake with a spatula, turn it over, and brown it for another half a minute.

We put a plate of hot pancakes on the table. You can serve kefir pancakes with any sauces. The dough recipe is universal; they are good with fillings, pates, and sour cream. We take out whatever our heart desires from the reserves, pour some fragrant tea or warm milk and enjoy the meal. Bon appetit! Your Plyushkin.

The days of spring-winter confrontation are approaching, which end with a cheerful and at the same time sad, delicious holiday - Maslenitsa. This holiday came to us from our ancestors - the Slavs who lived in the territories of Russia, Belarus and Ukraine.

Maslenitsa acts as a certain milestone before which the cold reigns, and after which spring warmth comes into its possession. And after the winter fading of nature, it returns to life. The rebirth of life is the main subject of celebration.

Maslenitsa was also popularly called Baba's Week. On these days, engagements were often held, and in an earlier period, among the Slavs, marriages took place. Another thing to celebrate is fertility. These days, virginity, motherhood, and wisdom were praised.

The springtime songs that girls sang on the edges of the forest, in groves, and near ponds were a call to the earth for the forces of good and a request for Mother Nature’s blessing for the new harvest year.

But the negative qualities of women were not avoided. So, for example, on Friday, on a return visit, the son-in-law invited his mother-in-law to the house, along with her relatives and friends, treated them to vodka and said: “Drink, good people, so that my mother-in-law’s throat doesn’t dry out!” Which was a hint at the “sharp tongue” of the mother-in-law.

At the end of the festivities, there was the burning of an effigy of winter, the ashes of which were scattered across the field, thus consecrating the earth.

On Maslenitsa, the main attribute of the table is considered to be a pancake. According to the scientific version, among the Slavs, pancake was a funeral bread, with very deep symbolism. The pancake is round - a hint of eternity; it is warm - a hint of earthly joy; it is made of flour and milk - a hint of life. The custom of giving the first pancake to the poor to remember the dead, saying: “The first pancake is for the repose,” confirms this version.

There is another version regarding the pancake, which has been known since the 19th century: the pancake is the personification of the image of the Sun, round and golden.

Pancakes are baked with yeast, milk, kefir and water and served with various jams, sour cream, and condensed milk. You can stuff them with meat fillings, cottage cheese, mushrooms, and caviar.

Today we will prepare pancakes with kefir, for which there are a large number of recipes. We have selected the best recipes for sunny pancakes.

Pancakes with kefir: main principles of preparation

Before making pancake dough and baking them, I recommend that you familiarize yourself with the main principles of their preparation. These are the recommendations of the famous culinary expert in Ukraine - Alla Kovalchuk.

1. The dough should be homogeneous. If you feel that there are lumps, the dough needs to be rubbed through a sieve.

2. First, liquid products are mixed, and then dry ones. You need to add dry ingredients to liquid ones, and not vice versa.

3. For 1 pancake with a diameter of 26 cm, you need 50 ml of dough.

4. Eggs should be at room temperature. Ratio of eggs to kefir: 1 egg to 1 cup of kefir.

5. For 1 glass (250 ml) of kefir, add 50 g of sugar. Sugar gives the pancakes a golden color.

6. For 180 g of flour - you need 0.5 tsp. soda Add soda to the flour only when half of the flour has been added to the dough according to the recipe.

7. To obtain holes (openwork) in pancakes, the dough must be boiled with boiling water. The amount of boiling water should correspond to the amount of kefir in the dough.

8. To make the pancakes tender and soft, you need to add melted butter at the rate of: 1 cup flour - 50 g butter.

9. The pan for pancakes should be heated over high heat, and the pan should be baked over medium heat. Then the first damn thing won't be lumpy. We bake them for 1-2 minutes on the first side, and 30 seconds on the second side, this is for the first pancake.

Sometimes playing with flavors is very useful: for example, if you simply replace milk with kefir when preparing pancakes, you will be surprised at their fluffiness and porous structure. Yes, the pancakes will not be as thin as those made with milk, but you will feel a pleasant sourness in the taste: it is thanks to this that many deliberately use only kefir. Serve these pancakes with cheese, sour cream or fresh butter and enjoy. Let's start cooking with our selection of detailed recipes with photos!

Recipe 1: classic pancakes with kefir

Pancakes according to this recipe turn out tasty and soft. You will need very few ingredients, as well as preparation time.

You will need:
  • two and a half to three glasses of kefir;
  • one and a half to two glasses of flour;
  • two chicken eggs;
  • one tablespoon of sugar;
  • half a teaspoon of salt.

Let's start cooking:

Beat two chicken eggs, separate the yolks from the whites (use two not very deep bowls). The next stage of preparation is to grind the yolks thoroughly with the specified amount of sugar. Now you need to pour kefir (two glasses) into the resulting mixture. Mix everything thoroughly until the mass becomes homogeneous.

Now we can slowly introduce the flour. At this stage, the mixture must be stirred continuously to avoid unwanted lumps. Now let's move on to the whites: beat them together with half a teaspoon of salt. As a result, we should get a fluffy mass. Pour a third glass of kefir into our dough, and the whites go there too. Mix everything again using a blender or mixer.

Our dough is ready for frying. The frying pan should be well heated, add a small amount of oil to it and bake our classic pancakes with kefir. Fry each side for about a minute until golden brown.

Recipe 2: thin kefir pancakes

If you prepare thin, rather than traditional thick, pancakes with kefir, you can wrap them with absolutely any filling to your taste. However, such pancakes are delicious even hot, especially with jam, sour cream, honey or homemade preserves.

You will need:

  • one hundred and fifty grams of flour;
  • one hundred twenty milliliters of kefir;
  • eighty grams of sugar;
  • seventy-five milliliters of water;
  • fifty grams of butter;
  • three chicken eggs;
  • a third of a teaspoon of table salt.
Step-by-step recipe for pancakes with kefir:

The flour is thoroughly sifted. Don't neglect this step: sifted flour will help avoid lumps in the dough, which means the pancakes will taste much better. Flour is mixed with sugar and salt. Now mix one hundred and twenty milliliters of kefir with water and slowly pour the specified amount of flour into the mixture. The pancake dough is kneaded, we can add three chicken eggs to it. The mixture is mixed using a blender, mixer or whisk.

We can start frying. The pan should be well heated. Lubricate it with a small amount of vegetable oil. Bake until both sides are deliciously browned.

Note to housewives: If kefir pancakes turn out thick, then dilute the dough with a small amount of plain water or milk.

Recipe 3: custard pancakes with boiling water and kefir

This recipe changes the cooking technique significantly. We use the same products, but add boiling water to the dough.

You will need:

  • two hundred milliliters of kefir;
  • one chicken egg;
  • one glass of flour;
  • half a glass of boiling water;
  • two tablespoons of sugar;
  • fifteen milliliters of vegetable oil;
  • baking soda (quarter teaspoon);
  • a pinch of salt.

Let's start cooking:

Sift the flour. It will be saturated with oxygen and will save you from possible lumps in the dough. Mix the sifted flour with a pinch of salt and the specified amount of sugar. The chicken egg is thoroughly beaten with kefir. Add a mixture of eggs and kefir to the flour. The mass is thoroughly beaten using a whisk, blender or mixer until it becomes homogeneous.

Let's proceed to the next stage of preparation. You need to pour soda into boiling water (necessarily cool!). Next, boiling water is poured into the pancake dough. The mixture is thoroughly mixed, after which it must be left for at least five minutes. Pour fifteen milliliters of vegetable oil into the dough at the end. Before frying, the pan must be thoroughly heated and greased with a small amount of oil. If the dough is too thick, add a little plain water to it - this will make the pancakes thinner. Bon appetit!

Recipe 4: openwork pancakes with kefir

If you choose this particular recipe from our entire gastronomic selection, you will get light and airy pancakes with holes. There is nothing new in the set of products, we just slightly change the cooking technique and add a little milk.

You will need:
  • half a liter of kefir;
  • half a liter of milk;
  • three chicken eggs;
  • two glasses of flour;
  • one tablespoon of sugar;
  • vegetable oil (thirty milliliters);
  • salt (half a teaspoon).

Cooking steps:

The indicated amount of milk and kefir needs to be warmed up a little. Keep in mind that chicken eggs should not be cold either - leave them in the kitchen at room temperature for a while. Three eggs are beaten, soda is added to kefir, after which a small amount of milk (necessarily warm!) is poured into the mixture. Beat everything well using a whisk, mixer or blender.

Combine eggs with kefir, add salt and sugar. Beat the mixture again until it becomes homogeneous without any lumps. Now we can gradually introduce flour into the pancake dough, without ceasing to stir it. Add the remaining milk. Thirty milliliters of vegetable oil also goes there. The dough is ready for baking: as in previous recipes, the pan should be thoroughly heated and greased with a small amount of oil. Bon appetit!

Recipe 5: kefir pancakes with cognac

An alternative and very interesting recipe: if you add a little cognac to the dough, the pancakes will turn out very tender and will acquire a subtle, pleasant aroma. This dish can be served not only for breakfast for those closest to you, but also for the holiday table.

You will need:

  • one liter of kefir;
  • two chicken eggs;
  • four tablespoons of sugar;
  • salt (half a teaspoon);
  • one pinch of vanillin;
  • six tablespoons of cognac;
  • soda (one third of a teaspoon);
  • flour (add by eye, you can use it to adjust the thickness of the dough).

Preparation:

Beat two chicken eggs into kefir and mix thoroughly using a whisk, mixer or blender. Next, add a little salt and four tablespoons of sugar to the mixture. Mix again, add soda and one pinch of vanillin. Now add the flour, but do it very slowly so that there are no lumps in the future pancake dough, which will subsequently spoil the taste of the pancakes. The consistency of the dough should be somewhat reminiscent of liquid sour cream.

Now we can add cognac to the dough. As always, heat the frying pan well, grease it with a small amount of oil and fry the pancakes on both sides until they become golden brown. Ready!

Recipe 6: quick kefir pancakes with red caviar

This recipe will come in handy if you are planning to prepare a dish for the holiday table. The dish will look rich on the table and will certainly pleasantly surprise guests with its taste. It will only take forty minutes of your time.

You will need:

  • flour (0.8 cups);
  • cream (half a glass);
  • kefir (half a glass);
  • soda (half a teaspoon);
  • three milliliters of lemon juice;
  • one chicken egg;
  • one teaspoon of sugar;
  • a pinch of salt;
  • thirty milliliters of sunflower oil;
  • red caviar (a hundred gram jar will be enough);
  • butter (fifty grams).

Let's start cooking:

Beat the sugar thoroughly with the egg white. Then you can add the yolk and the above amount of cream to the mixture. As for baking soda, you need to extinguish it with lemon juice and add it to the mixture. Note to housewives: extinguish soda over a sink or other container, but not over the dough. Under no circumstances should unslaked soda get into the dough.

Pour kefir into the mixture, add a little salt and slowly add flour. It is advisable that the flour be pre-sifted. Now the future dough needs to be stirred to such a consistency that it resembles liquid sour cream. We can fry our pancakes: the frying pan, as always, is well heated, greased with a small amount of vegetable oil. Let's bake.

Once all the pancakes are ready, we can place them in a stack on a plate. It is advisable to grease the dishes with butter beforehand. Also, a small piece of butter is placed on each pancake while it is still warm. As for caviar, it can be served in two ways. First: serve in a separate plate (if your table is festive, then it is advisable to have several such small plates at different ends). Second option: caviar can be placed on each pancake in the stack. Bon appetit!

Recipe 7: Kefir pancakes without eggs

There are a huge number of recipes for kefir pancakes without eggs, but we offer the simplest and fastest. In addition, by replacing kefir with water, you will get a wonderful one that will become indispensable for you during the period. You will need a minimum amount of ingredients, and you will probably have them all in your kitchen. The pancakes will be tender in taste, and it is recommended to serve them with both sweet and meat, mushroom or fish fillings.

You will need:

  • kefir (five hundred milliliters);
  • sugar (one tablespoon);
  • vegetable oil (three tablespoons);
  • soda (half a teaspoon);
  • salt (two pinches);
  • wheat flour (one hundred grams).

Let's start cooking:

First, prepare the appropriate dishes. It is best to choose a deep saucepan or bowl. Pour kefir into it, then beat it a little with a whisk. Small bubbles should appear on the kefir.

Note that absolutely any kefir is suitable: the fat content is not important. Also, the thickness of the selected kefir will not affect the taste. The thickness of the dough can only be adjusted using flour. Now add the specified amount of vegetable oil to the dishes. Dry ingredients also go there: salt, soda and sugar. The mass is thoroughly beaten with a whisk again. Now we can slowly add flour, constantly stirring the dough to avoid lumps. Note that it is best to sift the flour first and add it to the dough in small quantities, for example, tablespoons. As for the quantity, look at it with your eye: it depends on the fat content of the kefir you choose.

If you prefer thicker pancakes, the resulting batter should be thicker. In this case, just add more flour. Accordingly, if you need thinner pancakes, then add less flour. The mixture must be thoroughly beaten and allowed to brew for at least fifteen minutes. Heat the frying pan thoroughly and grease it with a small amount of oil. Pour a little dough into the center of the heated frying pan, then distribute it evenly over the surface. Fry the pancake on each side for about a minute until it acquires a golden hue. You need to turn the pancakes using a special spatula. The dish is best served with sour cream, sweet sauces, and homemade jam.

Of course, pancakes cooked with kefir can hardly be called lean, because we add a fermented milk product to the dough. However, the fact that we do not add chicken eggs to the dough makes the dish not so high in calories. This recipe will be of interest, for example, to vegetarians or women on a diet. Bon appetit!

A few cooking secrets

  • Professional chefs do not recommend frying pancakes in large amounts of oil. In addition, greasy pancakes are simply tasteless. To prevent too much oil in your frying pan, use a small piece of gauze. It can be used to coat a frying pan with oil.
  • If you place the finished pancakes in a stack on a plate, we recommend covering them with a kitchen towel. This way they won’t cool down for a long time, but will still breathe.
  • Golden rule: when preparing pancakes with kefir, add slaked soda to the dough before the flour (this is very important!).
  • As for vegetable or melted butter, these products are added to the dough at the very end of cooking.
  • If you add sugar and salt to the dough, it is advisable to dilute them with boiled water (a small amount). After this, the products should be strained using a sieve, and only then can they be poured into the dough.
  • Eggs must be extremely fresh. Before adding eggs to the dough, you need to beat them thoroughly.
  • To prepare pancakes, sifted flour is used. However, it is advisable to sift it not in advance, but before preparing the dough.
  • Pancakes prepared with kefir have a rather neutral taste. This means that the filling can be absolutely anything, from salted fish or caviar to chicken, cabbage, eggs with garlic, rice with eggs and many other ingredients.
